洋蔥豬扒 Pork Chops with Onion

I found this improved recipe from a TV show, and we love to have this with spaghetti or rice.

















材料: Ingredients:

  • 豬扒6塊 6 Pork chops

  • 洋蔥3個 3 Onions

  • 老抽、生抽、糖、生粉、麻油及水少許 Dark soy sauce, soy sauce, sugar, corn starch, sesame oil and a little water

  • 蛋白1/2隻 1/2 egg egg whites

做法: Procedure

  1. 首先用刀背只剁豬扒的一面。 Using the dull side of a cleaver, beat one side of the pork chops to make them softer.

  2. 醃豬扒要謹記色、味行先,即要落老抽、生抽及糖,再加1/2隻蛋白,醃大約5分鐘後才落生粉、麻油及水。 To marinate, use the dark soy sauce, soy sauce, sugar, and the egg whites and marinate for 5 minutes. Then add the corn starch, water, and sesame oil.

  3. 洋蔥片要分開。 Slice the onions into slices, then separate into strips.

  4. 落鑊炒時,炒至香味溢出,便加老抽及糖,然後洋蔥起鑊。 Saute the onions, when they smell good, add a little dark soy sauce and sugar, mix well, then set aside.

  5. 之後煎豬扒至有少焦, 再加入洋蔥、水煮汁,豬扒起鑊後切件,再放豬扒落鑊炒連洋蔥再炒至入味。In the same pan, add oil and pan fry the pork chops. When they start to look a little burnt, take out of the pan and cut into small pieces. Put the onions back in the pan and add a little water. When it starts to boil, put the pork chops back in, stir well, and serve.

瓜粒湯 Winter Melon Soup

材料: Ingredients:

  • 冬瓜1/3lb 1/3 lb winter melon

  • 瘦肉1/4 lb 1/4 lb lean pork

  • 冬菇5隻 5 dried shiitake mushrooms

  • 瑤柱少許 A little dried scallop

做法: Procedure


  1. 冬菇和瑤柱浸泡至軟。 Soak the mushrooms and scallops until soft.

  2. 冬菇、冬瓜和瘦肉切粒。 Dice the mushrooms, winter melon, and pork.

  3. 水滾後放入材料除了瘦肉。 Boil 4 cups water, then combine all ingredients except the pork.

  4. 至冬瓜至透明,便加入瘦肉。When the winter melon looks transparent, add the pork.

  5. 下鹽調味。 Add salt to taste.

*可用鮮蝦和帶子代替乾的。 Dry mushrooms and scallops can be substituted for fresh or can be omitted.

焗魚柳 Fish Fry















材料: Ingredients:

  • 魚柳3塊 Fish fillet x3
  • 日式麵包糠1杯 Panko 1 cup

  • 雞蛋1隻 1 egg

  • 胡椒粉少許 A little black pepper

做法: Procedure


  1. 魚柳洗淨後用紙吸乾水粉備用。Rinse the fish, pat dry, and set aside.

  2. 雞蛋打勻。 Whisk the egg.

  3. 胡椒粉和麵包糠混合。 Mix the panko and black pepper together.

  4. 魚柳沾上蛋液後再沾麵包糠 Dip the fish in the egg, then in the panko mixture.

  5. 放魚柳在焗盤上,可噴上少許油或加少許蛋液使麵包糠固定。 Put the fish onto a baking pan, spray cooking oil or leftover egg onto the surface of the fish, to make sure the panko stays in place.

  6. 用400F焗20分鐘 Bake at 400 degrees Fahrenheit for 20 minutes or until done.

薯仔番茄牛肉湯 Our Favorite Soup

This is one of the boys' favorite soup, I have to put this on the blog.


材料: Ingredients:
  • 薯仔3隻(大) 3 large potatoes
  • 番茄5隻(小) 5 small tomatoes
  • 牛肉碎少許 A little ground beef

做法: Procedure

  1. 薯仔煲軟後加入牛肉碎和番茄。 Peel the potatoes, cut into small pieces, put into boiling water until soft, then add the ground beef and tomatoes.
  2. 滾後用茶匙將番茄弄碎。 While the soup is boiling, use a spoon to squash the tomatoes and give the soup more tomato flavor.
  3. 加鹽調味。Add salt to taste.

南乳燒雞 Roast Chicken With Bean Curd Paste Sauce



材料 Ingredients:

  • 雞一隻 Roasting chicken (normally 5 - 7 lb) x 1
  • 南乳1舊 Bean curd paste sauce x 1 cube
  • 麻油少許 Sesame oil a little bit

做法 Procedure:

  1. 南乳和麻油混和。Mix the bean paste and sesame oil together.
  2. 洗滌雞之後, 將南乳和麻油途均勻雞內外,風乾二至三小時,用200。F烘二小時。
    Rinse the chicken and pat dry, put sauce on the inside and outside of the chicken, bake for 2 hours at 200。F.

混醬炒雞柳 Chicken Breast With Mixed Sauce



材料: Ingredients:
  • 雞胸肉1/4lb Chicken Breast 1/4 lb
  • 洋蔥2pcs 2 Onions
  • 花生醬1/2湯匙 Peanut butter 1/2 tbsp
  • 磨鼓醬1/2湯匙 Ground bean sauce 1/2 tbsp
  • 海鮮醬1/2湯匙 Hoi Sin Sauce 1/2 tbsp
  • 麻油1/3茶匙 Sesame oil 1/3 tsp
  • 水1/3茶匙 Water 1/3 tsp
  • 芝麻少許 Sesame seeds (a little bit)

做法:Procedure

  1. 洋蔥切片後拆開成幼條。 Cut the onions, then take them apart into strips.
  2. 雞胸切片或絲,用少許油、鹽和粟粉醃一會。 Slice the chicken breast into strips, use a little oil, salt, and corn starch to marinate for a while.
  3. 將醬料、水和油混合。 Combine the sauce, sesame oil, and water and mix well.
  4. 洋蔥炒至半熟,備用。 Saute the onions until about half done, then set aside.
  5. 炒雞肉炒熟,洋蔥回鑊。 Stir-fry the chicken, then add onions.
  6. 加入混合的醬炒勻便可上碟。 Add the mixed sauce, fry well, and serve.
  7. 灑上芝麻裝飾。Sprinkle sesame seeds on top to garnish.

鼓汁蒸魚翅瓜 Steamed Spaghetti Squash With Black Bean Sauce

Try to use the other half of the spahetti squash, use the garlic and black bean sauce maybe the kids will like it, here is the result.





材料:Ingredients:

  • 魚翅瓜半個 Half a spaghetti squash
  • 蒜蓉1湯匙 Minced garlic 1 tbsp
  • 蒜蓉豆豉醬1湯匙 Garlic and black bean sauce 1 tbsp

做法: Procedure


  1. 魚翅瓜去核去皮切片。 Remove the seeds and skin from the squash, then slice.
  2. 加入蒜蓉和蒜蓉豆豉醬蒸18分鐘或至熟即可。 Add minced garlic and sauce and steam for 18 minutes or until done.

魚翅瓜碗仔翅 Spaghetti Squash Soup

Found this recipe on internet, and we have a lot of spaghetti squash at the store, well, here is the result.






材料: Ingredients:


  • 魚翅瓜半個 Half a spaghetti squash
  • 瘦肉100g Lean pork 100g or 1 pork sirloin steak
  • 花菇6-8粒 Dry shiitake mushrooms 6-8 pcs
  • 木耳6-8片 Dry dark fungus 6-8 pcs
  • 水1 can Water 1 can
  • 上湯1 can Chicken broth 1 can
  • 粟粉2湯匙(用4湯匙水開均) Corn starch 2 tbsp (use 4 tbsp water and mix well)
  • 雞蛋1隻(打散) 1 Egg (whisked)

調味料:Spices

  • 老抽1湯匙 Dark soy sauce 1 tbsp
  • 鹽適量 Salt (to taste)
  • 麻油少許 Sesame oil (to taste)
  • 胡椒粉少許 Black pepper (to taste)

做法: Procedure



  1. 魚翅瓜可蒸、、叮或焗熟 Microwave/Bake/Steam the spaghetti squash until done.
  2. 花菇及木耳浸軟,切絲待用 Soak the mushrooms and fungus until soft, then cut into strips.
  3. 瘦肉切絲,略醃待用 Cut the pork into strips and marinate in salt and oil for a while.
  4. 煲滾水及上湯,加入肉絲、花菇絲及木耳絲略滾 Boil the water and broth, put the pork, mushrooms, and fungus in, and return to a boil.
  5. 魚翅瓜去核後用叉將瓜肉刮出,加入湯中略煮 When the squash is ready, remove the seeds and use a fork to scrape out the squash.
  6. 收細火加入粟粉槳攪均 Lower the heat, then add the corn starch mix and stir well.
  7. 放入調味料(請試味),收火,慢慢倒入蛋槳攪均即可 Add spices to taste, then turn off the heat and slowly pour the whisked egg in. Gently stir.

清蒸海鮮 Steamed Fish

材料 Ingredients:

  • 魚1條fish x 1
  • 薑數片 several slide of ginger
    蔥2條 2 stalks of scallion

做法 Procedure :

  1. 洗淨魚備用。Wash the fish and set aside
  2. 蔥白放在魚下面,薑放在魚肚內,又或魚柳上。put the white end of scallions on the plate, the fish on top of the scallions, gingers inside the fish stomach and/or top of the fish
    蒸6 -8分鐘。steam 6 - 8 minutes.
  3. 蔥綠色部分切粒,加入鼓油和滾油,淋在蒸熟釣魚上。 Cut the green part of scalions into small pieces, add a little bit soy sauce, and add boil oil. Pour the mixture on top of the fish and served.

西洋菜豬骨湯 Watercress Soup



材料: Ingredients:
西洋菜2至3束(約1磅) Watercress 2-3 bunches (about 1 lb)
豬骨1磅 Pork bone 1 lb
蜜棗 x2 Preserved Red Dates x2
南北杏少許 Peeled Almonds

做法: Procedure
先將豬骨出水,備用。Blanch the bones and set aside.
洗凈其他材料。 Wash the other ingredients.
水(約5 qt)滾後放進所有材料煲滾。 Boil about 5 qts water. After it begins to boil, combine all ingredients inside.
慢火再煲3小時,下鹽調味。Simmer for 3 hours. Add salt to taste.

七彩炒牛肉 Colorful Stir-Fry Beef



材料 Ingredients:


  • 茴香半個 Fennel half pc
  • 紅椒一個 Red bell pepper x 1
  • 黃椒一個 Yellow bell pepper x 1
  • 牛肉1/4磅 Beef 1/4 lb
  • 蒜蓉一湯匙 Minced garlic 1 tablespoon
  • 蒜蓉豆鼓醬一湯匙 Garlic black bean sauce 1 tablespoon

做法 Procedure:

  1. 茴香和椒切絲備用。 Slice the fennel and pepper.
  2. 牛肉放鼓油、油和粟粉醃一會。 Slice the beef, use soy sauce, oil, and corn starch to marinate.
  3. Saute the vegetables, then put aside.
  4. 放油、蒜蓉和蒜蓉豆鼓醬起鑊略炒。 Heat a pan, pour oil in, add garlic and black bean sauce, then add the beef and stir-fry until about halfway done.
  5. 將蔬菜回鑊,至牛肉熟便可。 Add the vegetables with the beef and mix well.

鬼馬牛肉 Beef with Crullers



材料 Ingredients:

  • 油條 fried twist crullers
  • 牛肉 beef

做法 procedure:

  1. 油條切片。 Slice the crullers.
  2. 加油條入熱油鑊中炸至脆。 Put the crullers into a wok with oil; pan-fry until crispy.
  3. 牛肉炒熟便可。 Use soy sauce, oil, and corn starch to marinate the beef, then stir-fry until done.

因我家的小朋友喜歡脆油條,亦可將其略煎,牛肉炒熟打獻,油條較軟和有牛肉的汁味。

沙茶牛肉 Shacha beef

材料 Ingredients:

  • 牛肉 x 1/4 lb
  • 洋蔥 x1
  • 沙茶醬 sacha sauce x 1 tablespoon

做法 Procedure:

  1. 牛肉切片用鼓油、油和粟粉來醃 Slice the beef to strip, use soy sauce, oil and corn starch to marinate the beef.
  2. 洋蔥切片後分開成幼條。 Cut the onion and break them apart.
  3. 將洋蔥炒香至半熟便放進碟中備用。 Saute the onion till it half done; put them aside.
  4. 放牛肉炒至開始熟再加沙茶醬和洋蔥,略炒便可。 Saute the onion until it is almost ready, add the shacha sauce and onion, gently stir well together.

* 可將洋蔥改成為其他蔬菜,例如:金茹等等。Can substitute onion to other veggie.

瘦身焗牛肉 Healthy meat loaf



This is one of our boys' favourite dish.


材料Ingredients:
  • 牛肉碎ground beef 3 - 4 lb
  • 西芹Celery x 2 stalks
  • 洋蔥Carrot x 1
  • 紅蘿蔔Onion x 1
  • 蛋Egg x 2
  • 洋蔥湯味粉1包Onion soup mix (I use Lipton) x 1
  • 麵包糠Bread crumbs 1 cup
  • 水Water 3/4 cup
  • 茄汁Ketchup 2/3 cup
  • BBQ醬或茄汁BBQ sauce or ketchup 1 cup

做法Procedure:

  1. 預熱焗爐350。F. Preheat oven 350F
  2. 西芹、洋蔥和紅蘿蔔切碎。Minced celery, onion and carrot.
  3. 材料(BBQ醬例外)混和 Combine all ingredients (except BBQ sauce) and mix well.
  4. 放入焗盤中。Shape them into meatloaf pan or any pan.
  5. 加BBQ醬在上面。Spread the BBQ sauce on top of the meat loaf.
  6. 焗1小時左右。Bake 1 hour or until done.
  7. 等10分鐘可用。Let stand for 10 minutes before serving.

*這是2個份量。 This is for 2 loaf.
*可不加西芹、洋蔥和紅蘿蔔。Optional for veggie.

Chili



材料 Ingredient:

  • 油一茶匙 vegetable oil`1 or 2 teaspoons
  • 瘦牛肉碎一磅半至二磅瘦牛肉碎 lean ground beef 1-1/2 to 2 lb
  • 洋蔥一個切碎white onion x 1, chopped
  • 辣椒粉二湯匙. chili power. 2 tablespoons
  • 甜紅椒粉 一湯匙 paprika 1 tablespoon
  • 蒜頭四至五塊切成蓉 garlic 4 -5 clove , minced
  • 孜然一茶匙 cumin 1 teaspoon
  • 喼汁一茶匙wocesterstire sauce 1 teaspoon
  • 花腰豆一罐 pinto beans x 1 can
  • 紅腰豆一罐 kidney beans x 1 can

做法 Procedure:

  1. 沖洗豆備用。Rinse the beans from the can.
  2. 用油放入鍋中。Put the oil in the heated pot.
  3. 加入蒜蓉和洋蔥略炒。Add the garlic and onion, gently stir.
  4. 加入牛肉碎,要弄碎Add beef, and breaking them apart,.
  5. 加入香料略炒。Add the spices and stir them well.
  6. 當肉差不多熟加入豆。When the meat is almost done, add the beans.
  7. 加少量水煮20分鐘,略搞混。Add a little more water, and simmer for about 20 minutes or so, stirring occasionally.
  8. 加鹽調味。Add salt to taste

**如不喜歡孜然可不加,試味後可加多一些香料。
**如吃素的可改肉為菇。亦可改為火雞肉。

火雞骨紅蘿蔔煲湯 Turkey and carrot soup

材料 Ingredints:

  • 火雞骨半隻 Turkey breast bone half
  • 火雞頸 Turkey neck (can substitude to drum stick bone)
  • 紅蘿蔔二磅半 Carrot 2 1/2 lb

做法 Procedure:

  1. 將火雞骨「如有頸或腿」略為出水,洗淨備用。Blanch the turkey
  2. 紅蘿蔔去皮切段。Peel and cut the carrot.
  3. 放全部材料入滾水中,待水再度滾後,慢火煲大約三小時便可。
    Put all the ingredients into boiling water, when it returns to a boil, simmer for 3 hours.


* 火雞出水和洗淨目的是去除胸內stuffing,並且去除多餘油份。 Purpose for blanck the turkey is to clean out the stuffing and extra fat.
